Meatballs of cod in green sauce. 
Today we present some great cod meatloaf. Very healthy alternative to some meatballs, perhaps more fat. They will melt in your mouth, you will hardly have to chew them. 
And the green sauce, one of the richest that exists, will give it that wonderful aftertaste that will make you leave none on the plate. 
Let's see then the recipe to make these meatballs in green sauce.

INGREDIENTS FOR 4 PEOPLE

1 onion
800g of desalted cod
4 cloves of garlic
1 glass of white wine
1l of fish stock
1 bunch of fresh parsley
1 egg
100g breadcrumb
250g peas
Flour
Salt and pepper
Olive oil

HOW TO MAKE COD MEATBALLS IN GREEN SAUCE

Time : 45 minutes.

Follow these steps to get an excellent second course

We prepare the meatball dough
We put the desalted and crumbled cod in a bowl. Add well chopped onion, garlic and parsley. 
We add bread crumbs soaked in white wine, the egg and a handful of breadcrumbs. 
And finally, a pinch of salt and a pinch of pepper.

We give each of them a rounded shape
We mix all the ingredients with our clean hands.
 When you have a uniform dough, take small portions and roll them, that is, pass them from one hand to the other while squeezing them.

We seal the fish balls
Once we have them, we flour them, they are well smeared in flour. 
Then, in a frying pan with plenty of oil over high heat, place the cod meatballs in green sauce and fry them for 2 minutes. 
After that time, we remove them from the oil and put them on an absorbent paper.

We prepare the green sauce of the meatballs
In a wide skillet pour a little oil and put it on a low heat. 
When it is hot, add 2 or 3 minced garlic cloves, and let them cook for 2 or 3 minutes.
 When they begin to take color, we add a teaspoon of flour, mix and let it roast for 1 more minute.

We finish this green sauce
Once the flour is toasted, add a glass of white wine and mix again.
 Let it cook one more minute so that the alcohol evaporates. 
We continue to attach the peas and a handful of chopped parsley. 
And to finish, we pour the fish stock. Bring the sauce to a boil and stir.



We attach the sauce with the meatballs
When the sauce is boiling, add the cod meatballs. 
Let cook over medium heat for 10 or 15 minutes. No more because the fish can run dry.
