BEETROOT BOILED EGG AND PEANUT SALAD

How are you?
I loves beets. Especially if they are from the garden and I prepare with them this magnificent salad of beets with eggs and peanuts that I bring you. It is a delicious salad that will not leave any diner indifferent. 
In the current season it can be served perfectly as a single dish or, if you are more greedy, accompanied by a grilled beef steak.

Ingredients

beets - 400 g
eggs - 3
honey - 1 tbsp.
mustard - 2-3 tbsp.
lettuce - 200 g
lemon - 1


peanuts - 1 handful
dill - 5-7 sprigs
olive oil - 2-3 tbsp

Instructions

Cook the eggs. To do this put them in a saucepan, cover them with cold water and add 1 tablespoon of salt.
Put them on medium heat. As soon as the water starts to boil, COOK 2 MINUTES, turn off the heat and remove the pan from the kitchen.
 Leave the eggs resting as is, in hot water, for 7-8 minutes. After that time, cool them in cold water and peel them.

If the beet you bought is raw, cook it with skin covered with water for and 1.30-2 h or until done. Cook over medium heat. The time depends on the size of the beets and the quantity of the pieces.

Once cooked, cool it, peel it and cut it into julienne strips.
Attention! If you bought the beets that come in the packages already cooked, just peel it and cut it into julienne strips.

Grate the skin of the lemon. As zest we are only interested in the first layer of the lemon, the yellow one. It is there where the aroma and essential oil of the lemon are concentrated.

Beetroot, Boiled Egg and Peanut Salad

Cut the lemon in two and squeeze the juice.

In a container put the lemon juice and the zest obtained, 2-3 teaspoons of mustard, 1 tablespoon of honey, a pinch of salt and 2-3 tablespoons of oil. Stir vigorously until all ingredients are mixed.

Wash and dry 5-7 sprigs of dill.
Finely chop the dill and with the help of a knife slice the roasted peanuts.

Wash, dry and cut the lettuce into strips of 5 centimeters.

In a bowl, put lettuce, beets, peanuts, dill, two eggs cut into four. Add the vinaigrette, stir and then serve garnishing with remaining quarters of egg.

In this recipe, romaine lettuce works very well, but you can add whatever you have.
Fresh beets are much richer than those that come already cooked, but with either one, the salad will be very rich.
The mustard that I recommend is Dijon or any other that is slightly itchy. If you don't like itchy mustard, then put the one you want.
