Fried milk is a very typical dessert of Spanish gastronomy.
It basically consists of milk, which undergoes a simple treatment to obtain a delicious flavor and thicken a little.
Then it is battered and fried.
It is a recipe that, although it takes some work, is very easy to make.
The secret to making fried milk delicious is the point of creaminess inside.
It should be solid enough so that it doesn't fall apart, but creamy enough that it doesn't get too hard. So it is very important to measure the quantities so that this dessert is really delicious
INGREDIENTS TO MAKE FRIED MILK FOR 2 PEOPLE:
500ml milk
200ml milk + 80g cornstarch
1 vanilla
75 or 100g of sugar
lemon and orange peels
3 egg yolks
20g butter
1 cinnamon stick
flour and eggs to coat
75g of sugar and 1 teaspoon of cinnamon powder, for the end

FRIED MILK RECIPE:
1.- We put the 500ml of milk in a saucepan.
We add the cinnamon stick, the lemon and orange peels, amount to taste and, without adding the white part that makes it very bitter, the vanilla cut in half (remove the seeds from the inside to add them here too) and the butter.
We heat until it is about to come to a boil and at this point, we turn off the heat and cover.
We let infuse 30 minutes
2.- After time, put the egg yolks and sugar in a bowl.
We beat with a rod until the eggs foam slightly.
Then, in a glass we put the 200ml of milk mixed with the cornstarch.
Beat with a fork until there are no lumps.
We add this mixture to the mixture of eggs and sugar and beat again until obtaining a homogeneous, smooth and smooth mixture.
3.- To the milk that we had infusing, we removed the shells, the cinnamon stick and the vanilla stick. We return to heat at a medium boil (about 50-60º) and add the mixture from the previous step.
We begin to stir with the rod and continue doing it for one two minutes.
We will see how, almost immediately, the mixture begins to thicken
4.- We put this mixture in a mold or source that we have at home.
It is important that it has a certain thickness, so do not choose a very large one.
Between 1 or 2 cm thick will be fine. It is not usually necessary but, you can smear this mold with a little butter, so that it does not stick.
At first, we will see how the milk seems very liquid but, this has to thicken even more.
Cover with transparent kitchen paper, in such a way that the paper is in contact with the milk, so that it does not crust and let it temper a little, at room temperature.
Then we put everything in the fridge and leave a minimum of 4 hours.
Better if it's a whole night
5.- Over time the fried milk will already have a much thicker consistency.
It will still be very creamy and delicate but it will be pliable.
So we carefully cut it into rectangular or square portions, about 3 to 5 cm on a side.
We pass each piece by flour, then by beaten egg and fry in abundant oil.
6.- When they are golden brown and hot inside, remove the oil and place them on absorbent paper for a couple of minutes to remove the excess oil.
Meanwhile, on a plate we put on a plate about 75g of sugar and a teaspoon of ground cinnamon.
We mix a fork well and coat the fried milk in this mixture.
It is better to do it when it is still warm so that it takes better this mixture, it only remains to eat it! that, you can make it freshly made, more temperate or directly cold to your liking!
It is a laborious thing to do the recipe for fried milk but it is something worth doing.
It is delicious!
