PUPUSAS CORN TORTILLAS WITH CHEESE

Ingredients
corn flour - 200 g or 1.5 tz.
salt - 1/2 tsp.
FILLING
spinach - 60 g
garlic powder - to taste

oil for spreading pupusas - to taste
Instructions
Add salt to the flour.
We remove.
Add the water. I recommend adding it little by little. Since depending on the brand of flour you may need more or less water.
We remove and ready.
The dough is made.
It must be firm but also soft.
The spinach previously washed and chopped.
Add the grated cheese.
We add dry garlic to taste.
And the salt.
We stir very well.
So that the spinach leaves lose their volume, I am going to knead the filling by hand.
Pupusas are formed between the hands.
For this we are going to need water, to wet our hands and thus avoid that the dough does not stick to our hands. And we will also need the oil.
That it will help us flatten the pupusas.
For 1 pupusa go 2 tablespoons of dough and 1 tablespoon of the filling.
We wet our hands.
We take 2 tablespoons of dough.
We make a ball.
We make a cleft inside.
We put the filling there.
And we close it by making a ball.
The dough made from cornmeal is like clay. It is very different from the one made with wheat flour since it does not contain gluten.
We smear the ball with oil and clapping, passing it from one hand to the other, we flatten it.
We cook it in a pan or on a griddle previously heated over medium heat. We cook them until they are golden brown.
Once they have browned on one side we turn them over.
And when you see that they have also browned on the other hand, we remove them from the pan.
In the same way we cook the remaining tortillas.
If you see that when you cook them you get a little cheese, nothing happens. On the contrary, that usually pleases.
With these amounts, 9 pupusas come out, which are usually accompanied with hot sauce and pickled cabbage or cabbage salad. Although alone they are also very rich.
Notes on the recipe
Pupusas are typical of Salvador and Honduras. In fact, between these two countries there is a small dispute over the origin of these tortillas.
And I have decided to try them because I thought that it must be good if they are similar to khychin. And I was not mistaken. They are really delicious. So I decided to make the video and share the recipe with you.
Of course, although the pupusas are stuffed tortillas, like khychin, they do not resemble each other. Come on, they have nothing to do with the fact that the first ones are made with corn flour and the others with wheat flour changes the whole thing. And the filling they carry also makes a lot of difference. And it is not so much because some carry cheese and others meat, but because of the way they are made and the effect these fillings have on the tortilla.
So I recommend preparing both the pupusas and khychin because you are sure to like them both. And you will not know with which to stay.
Pupusas stuffed with cheese and spinach
To make the filling I have used 2 types of cheese: mozzarella and feta. Mozzarella cheese does not have much character and that is why I have also added feta cheese, to give the filling more personality.
Feta cheese is a salty fresh cheese, very rich. But any cheese that has a flavor that pleases you serves you.
