DELICIOUS SORREL SOUP OR SPINACH

The sorrel appears in the meadows when spring arrives. They are very tender leaves with a slightly acidic flavor.

After the long and cold winter, after so many hours of darkness, after 4-6 months of landscapes in black and white, after the exhaustion of the autumn reserves, it comes tender, tasty, juicy and GREEN sorrel to color our table and our body.
Ingredients:

2 liters of water
1 medium carrot
1 bay leaf
1 leek or 1 onion
2 medium potatoes pulling large
150 g sorrel
1 clove garlic
oil
Salt
black pepper
4-5 mushrooms
3 eggs
1 bunch of parsley and dill


DELICIOUS SORREL SOUP OR SPINACH

We boil water with a bay leaf.
Peel the leek (or onion), chop it into squares. We reserve.

Peel the carrot.
We grate it and reserve it.
We peel the potato.
We cut it into squares and cook it in boiling water for 12-15 minutes.

We wash the sorrel (or spinach) ...
... and cut into strips. We reserve it.
We put the pan with oil on fire.
As soon as it is hot we add the leek and fry it.

When the leek turns golden brown, add carrot.
We fry everything 2-4 minutes and set aside.
We wash and laminate the mushrooms.
Once 12-15 minutes have passed and the potato is already cooked, add the sorrel.

We add mushrooms.
Salamos.
We put the eggs to cook about 10 min.
Add the sauce, remove and remove the pot from the heat.

Now we add the lemon juice (if we do with the sorrel it is not necessary to put lemon juice),…
... black pepper, ...
... the finely chopped garlic and cover the pot.

We remove the tails to the parsley and dill.
Chop it finely.
Crush until you start to see its juice.

We put it in the pot.
Peel the eggs and add them to the soup.
The sorrel soup is served with a tablespoon of fresh cream (which in supermarkets-el corte ingles, gourmet club del corte ingles, mercadona- is usually in the fridges, in the dairy section)
