100g butter
2 egg yolks

HOW TO MAKE SALMON

We prepare the hollandaise sauce:
Frist we melt the butter
In a saucepan, put the butter cut into cubes and let it melt little by little over very low heat, so that it does not burn.
Once it is melted, carefully remove, with the help of a spoon or a ladle, the foam that comes out on its surface.
Then, remove the pan with the butter from the heat and let it warm for a few minutes.

We beat the yolks of some eggs
Next, in a bowl, we put the yolks of the eggs and season them.
 Then we beat them well. For this, it is better to use a rod machine,
although you can also do it with a fork if you prefer.

We add the melted butter little by little while we continue beating
While we continue beating the yolks, we will gradually pour the melted butter, in fine thread.
It is important not to stop beating at any time, therefore, it is better to use a rod machine.
We will be able to see how the serum - a whitish part - that must be discarded will be in the bottom of the casserole.
