MEXICAN CHICKEN FAJITAS

How good is Mexican food! This time I bring you some Mexican chicken fajitas. A very easy recipe to make and also, as a result, we will obtain a typical dish of this country, in our own home. For these fajitas, we will only need some chicken breasts, some vegetables and a few spices to marinate the chicken itself. All of them, simple ingredients that in Spain, are very easy to find.

MEXICAN CHICKEN FAJITAS

INGREDIENTS FOR 8 UNITS:

2 chicken breasts

1/2 onion

1/2 green pepper

2 cloves of garlic

A handful of fresh coriander

1 tablespoon of hot paprika

1 tablespoon of ground cumin

1/2 red pepper

1/2 yellow pepper

1 tablespoon chili or cayenne powder

8 large Mexican tortillas

salt and pepper

Olive oil

RECIPE OF THE MEXICAN CHICKEN FAJITAS:

Time : 30 minutes.

A very easy recipe to make

First, we seal the breasts

In a wide skillet, heat a splash of oil over high heat. 

When it is hot, add the breasts, previously seasoned and cut into strips, and sauté them for three or four minutes. 

After this time, remove the breasts from the pan and reserve them.

It is the turn of the vegetables

In the same pan, add a little more oil, if necessary. We lower the power of the fire a little and add the peeled onion and the peppers.

 Everything, cut into thin strips. We also add the previously minced garlic cloves. 

Season and mix while frying for about 10 minutes.

We return the breasts and prepare a dressing for the Mexican fajita

After this time, with the vegetables already soft, return the chicken to the pan. 

We also add cumin, chili powder and paprika. 

We mix and integrate everything well and let cook about 5 more minutes.

We form the Mexican chicken fajitas

Finally, in another pan, heat the Mexican tortillas. Once hot we place them on a plate.

 On them, we put a little of the stuffing of chicken and vegetables. 

Sprinkle with fresh chopped coriander and finally roll the tortilla. We serve immediately.
